Best suggested applications for our Flavors
Soups, chowders, bisques, stocks, bases, sauces, dressings, dips, pates, stuffings, ready to eat meals or wherever seafood flavor is required, both in hot and cold applications.
These guidelines are simply a starting point to begin working with NorthTaste flavors in your own unique recipes. The level of concentrated flavor can then be adjusted to the specific application for required taste and preference.
Soups, Bisques, Chowders, Stocks etc.
Northtaste flavors are a concentrate and we suggest that you start by using the concentrated flavors at between 5% and 10% of the total liquid amount in the total batch. Mix our concentrates in when liquid is warmed to 140ºF / 60ºC.
Dips, Pates, Bases, Stuffings etc.
When using the Northtaste concentrates with applications that have a limited amount of liquid, we suggest that you start by using the concentrated flavors at about 1% of the total batch.
